THE LAND OF EXTREMADURA

Our Olive Grove

SIERRA CARIJA

These olive groves are the roots and the heart of our project; here lie our oldest trees—many centuries old—which we nurture with the utmost care day by day, ensuring the continuity of our labor for the generations of Nicanores yet to come…

The groves feature a blend of Verdial de Badajoz and Carrasqueña varieties, naturally interspersed throughout.

They are located at the foot of the Sierra Carija, a protected natural area, right next to the Roman dam of Proserpina—the oldest in Spain, dating back to the 1st century BC.

This area is highly cherished by the locals of Mérida, and a true delight for the many pilgrims who visit it as they travel the Vía de la Plata toward Santiago de Compostela.

VALVERDE

Located in the municipality of Valverde de Mérida, just 10 km from our central operations, this is our youngest olive grove, planted by our own hands in 2015.

At this estate, we had the opportunity to apply all the expertise we have acquired over the years to establish an intensive Picual olive grove. We implemented a 7-meter plant spacing and a solar-powered fertigation system designed to optimize our yield without increasing our carbon footprint, thus maintaining a perfect harmony between tradition, innovative cultivation techniques, and sustainability.

Our Olive Farming Practices

THE PROCESS

The Awakening of the Land

Everything begins when the fruit still holds its secrets. On our estate, early harvesting is a family challenge: we select the precise moment when the olive, still green, offers its highest concentration of aromas and polyphenols. No buscamos cantidad, sino la máxima expresión de un aceite con carácter, nacido de nuestra tierra extremeña.

Freshness captured instantly

Time is our greatest ally and our fiercest enemy. That is why, we reduce the distance between the grove and the mill to an absolute minimum. Within just a few hours, we transport our freshly harvested olives to ensure they lose none of their properties. We understand that the quality of our extra virgin olive oil begins with the speed at which we handle our fruit.

Committed to EVOO

At a controlled temperature, we extract the olive juice respecting its original DNA. We do not force nature; we let it be el propio fruto el que entregue su esenciaThe result is a premium extra virgin olive oil: vibrant in color, with that distinct aroma of fresh grass and tomato that transports us directly back to our olive grove.

The Selection

Before reaching your table, our oil rests. After extraction, we allow it to settle so it decants naturally, preserving all its purity and stability. Every bottle that leaves our home is the result of a rigorous selection process—a personal commitment from our family. to ensure that what you receive is a pure extremaduran evoo.
